Herb Snow Cone Recipe

4-6 fresh sprigs of herbs (mint, lemon thyme, or chocolate mint)
2 cups water
1 cup sugar
Natural food coloring (Fresh Market carries sometimes)
In a saucepan, stir together the sugar and water. Bring to a boil, and boil for about 1 minute.
Add herbs to the pot whole and simmer for 5 minutes.
Remove from heat and let stand for 20 minutes to steep herbs.
Allow to cool, and strain herbs out using a fine sieve. Store in a container for pouring.
Allow to cool in the refrigerator a couple hours to overnight.
Pour over shaved ice to flavor.
